Banana Bread
The riper the banana the sweeter the taste. Try this recipe with yogurt rather than using buttermilk.
Ingredients:
1 3/4 cups Brown Sugar
2 Large eggs
2 Large egg whites
1/2 cup Blood Orange Olive Oil from Olive Oil Etcetera
1 1/2 tsp pure vanilla extract
2 medium ripe bananas, mashed
1/2 cup yogurt (plain or vanilla)
2 cups flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
Directions:
1. Preheat oven to 350 F.
Generously coat one large or two small loaf baking pans with butter, olive oil or spray.
2. In a mixer bowl, add brown sugar, eggs, egg whites, olive oil, and vanilla. Beat on medium speed for 2 minutes.
3. Add bananas and yogurt. Blend for another minute.
4. Add flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Blend until smooth. Pour into prepared loaf pans.
5. Bake 45 - 55 minutes or until a knife is inserted and comes out clean.
