Peanut Butter Granola Bar
Ingredients:
1 cup rolled oats (not quick oats)
2/3 cup crispy brown rice cereal or rice krispies
1/3 cup flax meal
1/3 cup bittersweet chocolate chips or semi - sweet chocolate chips
1/3 cup dried cherries or dried cranberries
1/4 cup organic brown rice syrup or Buckingham Valley honey from Olive Oil Etcetera
1 Tablespoon pure maple syrup
1 Tablespoon water
1 Tablespoon Fruity extra virgin olive oil from Olive Oil Etcetera - (fruity is a very smooth olive oil rather than having a strong flavor)
1/4 cup natural PB or other nut seed butter
Directions:
Preheat oven to 350 F.
Line a 8 inch baking pan with parchment paper, letting it hang over the sides so it can easily be lifted out of the pan.
In a medium bow mix together all of the dry ingredients.
In a small bowl, mix together the wet ingredients.
Drizzle the wet ingredients over the dry ingredients and combine until mixed together.
Flatten into the baking pan and bake until golden brown in center and darker around the edges. This will be around 30 - 35 minutes.
Let it cool before cutting into bars or breaking it into bark.
*store in a container up to 5 days.
