Apple Crisp

A true classic that you can serve warm or cold, with ice cream or eat it for breakfast right from refrigerator. Yum

Ingredients:

4 Large Apples, cut into bite size pieces. I use a mix but Granny Smith is traditional. The more sweet or tart is the most preferred for Apple Crisp
  • 1/2 cup black raisins
  • Optional: 1/2 cup golden raisins, 1/2 cup quartered dried apricots
  • 1 Tablespoon fresh squeezed Lemon juice and Lemon zest
  • 1/3 cup sugar
  • 1/4 cup whole wheat pastry flour
  • A generous shake shake of Sweet Ground cinnamon from Curio spice company
  • 1/4 tsp ground nutmeg
  • Topping:

    • 3/4 cup old - fashioned rolled oats
    • 1/2 cup whole wheat pastry flour
    • 1/2 cup packed brown sugar
    • 1/2 tsp or more cinnamon
    • 1/2 cup butter (chopped into pieces)
    • unsweetened coconut flakes - optional
    • Walnuts or pecans chopped (optional)

    Directions:

    Preheat oven to 350 F.

Prepare a pie pan or 8 inch glass square dish for baking.

Combine all of the filling ingredients in a large bowl. Spoon the mixture into the baking dish.

Make the topping by combining all ingredients together. Using your hands or a pastry blender, mush the cut-up butter until it is crumbling, and mixture is lumpy and uneven. It tastes super yummy right now if you taste test.

Sprinkle the topping over the apple mixture in the dish.

Bake uncovered about 50 minutes or until the apples are tender. Cool for 15 minutes and enjoy warm or when it is cool.
