Yogurt Coffee Cake
If you like switching it up with ingredients and love a good yogurt and olive oil substitute, then this recipe is for you.
Ingredients:
- 1/3 Cup Olive Oil l- I used Butter Olive Oil
- 1 Cup Granulated sugar.
- 2 Large Eggs
- 1 Cup Yogurt (I used Greek Vanilla Yogurt)
- 1 tsp Vanilla Extract (a customer taught me how to make homemade, so I used that but use whatever you have)
- 1 tsp Butter extract (I did not use this) - Optional.
- 2 Cups Flour
- Optional: 1 mashed banana to add to batter, Mini Chocolate chips to add to the top of batter or in batter
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 1/2 tsp Salt
Crumb topping:
- 1/4 cup flour
- 3/4 cup brown sugar (packed)
- 1 cup finely chopped walnuts
- 1/4 cup olive oil
- 1/4 tsp salt
- At least 1 tsp Sweet Cinnamon
- Raisins (optional)
Directions:
9x9 inch pan - greased. Preheat oven to 350F.
1. Mix together the first 6 ingredients until smooth and creamy.
2. Add the flour, BS, BP and salt to the first 6 ingredients and combine until creamed together.
3. Pour 1/2 of the batter into the pan, then put 1/2 of the crumb mix on top.
4.With the remaining batter mix in a mashed ripe banana (optional) and then add a handful of mini chocolate chips to the top of the batter before topping it with the crumb mixture.
5. Bake 45 - 50 minutes or until a knife comes out clean from the center of the cake. Cool and serve. It's so good a little warm, before it totally cools.
