Apple & Kale Salad
You can use whatever greens you like but I prefer kale for this one. I like the hearty leaves of kale in general but this salad would also be good with Arugula.
You can add protein like chicken or egg to the salad as well.
1 or 2 Apples, diced and diced
3 Tablespoons Lemon Juice
1/2 cup raisins if you want some in every bite
1/2 a sweet or purple onion, chopped
1/2 cup crumbled blue cheese, goat, feta or parmesean cheese
3/4 cups walnuts - chopped
Cinnamon to coat walnuts
Powdered sugar to coat walnuts
Kale, arugula or mixed greens
Dressing:
3/4 unflavored yogurt or a yogurt of your choice
3 Tablespoons Arbequina Extra Virgin Olive Oil
1 - 2 Tablespoons dark balsamic Vinegar like the Traditional 18 year balsamic or the Pomegranate Balsamic Vinegar
2 Tablespoons cheese
1 tsp honey
1/2 tsp whole grain mustard (optional) I didn't add this
salt and Pepper to taste
Directions:
Step 1: Cut your apples and onions and combine in a bowl with raisins and lemon juice and set aside. Add some of your cheese to this bowl too.
Step 2: In a small pan toast your walnuts. Remove from heat and toss with cinnamon and sugar. Taste - Yum!
Step 3: In a blender, combine all of the dressing ingredients and pulse until smooth. Taste test
Step 4: Put your arugula in a bowl and add your dressing. Massage it into the kale with your hands to soften your kale and get it on all of the leaves.
Add your apple topping and walnuts and enjoy!
