Roasted Red Beets
I like to roast them pretty simple so I can flavor them afterwards depending on how I am making them. You can toss them with feta cheese, sunflower seeds, fresh lemon squeeze, salt and pepper, a little more oil and even balsamic vinegar. If you want to add shredded chicken or salmon, you can do that too.
Ingredients:
red beets
Blood orange olive oil
Salt and pepper (optional)
Directions:
Preheat oven to 400F.
Peel beets or rub off skin after its cooked. Coat beets with olive oil, Salt & Pepper is optional. Wrap beets in aluminum foil and place on a baking sheet. Cook about an hour or until tender. Let cool, peel them if you didn't prior to cooking and then cut them as desired.
